The High West Cask Collection Bourbon Finished in Sauvignon Blanc Barrels is a special release featuring a blend of 6-10 year old straight bourbon and rye whiskeys, uniquely finished for about 10 months in casks that previously held Sauvignon Blanc wine, imparting notes of stone fruit (peaches, pears), green apple, citrus, vanilla, hay, and spice, creating a fruity, complex, and crisp profile.

Tasting Notes:

Nose: Underripe peach, banana cream pie, vanilla, wet grass, lilac, hay.

Palate: Crisp green apple, grapefruit zest, cinnamon poached pears, raspberry cookie, toasted oak, suede.

Finish: Hint of fruity sweetness, gingerbread with honey, short

Blend: Combines straight bourbon and straight rye whiskeys.

Aging: Matured in new oak for 6-10 years, then finished in Sauvignon Blanc barrels for around 10 months.
